Just like the Pollo alla Pizzaiola recipe that I shared before, this is one of my favorite chicken dinner ideas. 
This rustic recipe also celebrates the essence of Italian cuisine—using a handful of high-quality ingredients to create something truly special.

As always, you can change up the recipe to your taste. In this version, we elevate the classic dish with the addition of flavorful green olives and Colavita olive oil, ensuring every bite bursts with flavor.
No matter how you change this recipe up ( add olives, potatoes, red peppers, capers....) make sure to serve it up with a few thick slices of freshly baked bread to soak up all that yummy sauce!

Tips for the Perfect Chicken Cacciatora

Choose bone-in chicken: Bone-in thighs and drumsticks stay juicy and tender during the slow cooking process. You can also use chicken breasts, but they might not be as flavorful.

Don’t rush the browning: Browning the chicken properly is key to building flavor in this dish. Make sure to sear it until golden on all sides before adding the soffritto (carrot, onion, celery) and sauce.

Adjust the seasoning: Taste your sauce as it cooks and adjust the salt and pepper accordingly. The green olives will add some saltiness, so be careful not to overdo it.

Customize with vegetables: If you want to add more vegetables, potatoes or bell peppers make great additions to this dish. Just sauté them with the onions and carrots.
