That's why I'm excited to share this recipe that allows you to savor the sweet taste of summer all year long, using a pantry staple – canned apricots. These apricot crumble bars are a perfect blend of fruity goodness and buttery crumbly perfection, offering a slice of summertime bliss in every bite.
These bars are a breeze to make, and the result is nothing short of spectacular.

Easy-to-Make Apricot Crumble Bars

Bring a burst of summer sunshine to your table with these quick and easy, buttery crumble bars filled with sweet and juicy apricots
Ingredients
For the crumble:
- 2 1/2 cups (300 gr) all-purpose flour
- 1 cup (90 gr) old-fashioned rolled oats
- ½ cup (100 gr) sugar
- ¼ cup packed (30 gr) brown sugar
- pinch of salt
- 1 large egg
- 6 oz (170 gr) unsalted butter, melted
For the filling:
- 3 15oz cans (425 gr each) apricot halves (no sugar), cut in slices and well drained
- 1 (or 2) tablespoon sugar
- 1/4 teaspoon cinnamon
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 375° F (190° C). Line an 8x8-inch or 9x9-inch baking pan with parchment paper.
- In a large mixing bowl, add the flour, oats, sugar, brown sugar, and salt, and mix to combine.
- Beat the egg in a small bowl and add to the dry ingredients. Add the melted butter (make sure it's at room temperature). Mix until combined. You will get a coarse, crumbly mixture.
- Move a little over half the dough to the prepared lined pan. Press the dough lightly to the bottom of the pan, with the back of your spoon (or your hands). Bake at 375° F (190° C) for 10 minutes.
- In a small bowl add the apricots slices (well-drained from the can liquid), sugar cinnamon, and cornstarch. Mix to combine. Distribute the apricot slices evenly over the dough.
- Sprinkle the remaining dough on top of the apricots by pinching the dough between your fingers to create bigger crumble pieces. Bake for about 45 minutes until golden on top and at the edges.
- Allow to cool completely before cutting into squares. For a better cut, you can refrigerate for a couple of hours before cutting. If you don't need perfectly neat squares, simply cut and enjoy! Store in the refrigerator for up to 4 days.
