Flaky, hearty, and scrumptious puff pastry pie with mashed potatoes, mozzarella and smoked ham

And what’s not to love about a flaky puff pastry pie filled with cheesy mashed potatoes, mixed with smoked ham pieces.

Cook the cubed potatoes until fork tender. You can simmer in hot water or like I did, place in a microwave-safe bowl, season with salt and olive oil, cover with plastic wrap, cut a couple of holes in the plastic, and microwave at 100 for about 12 minutes (depending on the size of the potato pieces).
Mash the potatoes into a large bowl, and let them cool down for 5 minutes.
Add two eggs, parsley, ham, mozzarella, and nutmeg. Season with salt and pepper if needed, and mix to combine.
Spread one sheet of puff pastry with the dijon mustard, leaving a 1-inch border free. Top with the prepared potato mix.
In a small bowl, mix the remaining egg with one tablespoon of water to make the eggwash. Brush the edge of the puff pastry. Top the pie with the second round sheet of puff pastry, stretching it slightly to fit.
Seal the edges with a fork or crimp the edges with your fingers. Score the top of the pie with a sharp knife or blade. You can cut a few slits or make a pretty design. Brush the top and edges with more eggwash and refrigerate the pie for 15 minutes.
Bake in the preheated air fryer at 400F for 20-25 minutes until puffy and golden on top.
Make sure to check after 15 minutes, if the top is starting to brown too soon, cover it loosely with aluminum foil.
Slice and serve hot!
