Holding on to summer with these shortbread and oath crumble bars packed with sunshine sweet strawberries and lemon flavor
Here is a quick, easy and mouthwatering summer treat: fruity and buttery strawberry crumble bars infused with lemon flavor.
These bars are sooo delicious, with a sweet, slightly tart and lemony flavor, mixed with a shortbread-buttery taste.
I'm now debating about what I love the most. The crumble bursting with strawberries and a hint of lemon flavor, or peaches with a touch of cinnamon...
I guess we don't have to play favorites right now, and try them both.
And now that I think of it, next crumble will be with strawberries and peaches - So, problem solved.
This recipe only take 15 minutes of your time, plus 45 minutes in the oven. Start by lining an 8 inch square baking pan with parchment paper. You can watch this video to see how I do it.
In a medium bowl, add the sliced strawberries, with lemon juice and cornstarch. Toss to combine.
In a separate large bowl, add the flour, oats, sugar and lemon zest. Mix to combine. Add the melted butter and mix with a spatula until you get a crumbly mixture.
Pless about 2/3 of the mixture into the prepare pan. Press down to the bottom with a spoon or cup. Place in the freezer the remaining dough.
Spread the strawberries on top of the crumble base and level. Top with the remaining crumble, pinching the dough between your fingers to get some bigger crumble pieces.
Bake at 350F for about 45 minutes, or until lightly golden on top. Cool down completely before cutting into pieces. You can make 9 bigger or 16 smaller squares or triangles. Store in the refrigerator if there's any leftovers.
