Quick and Easy Shrimp-Pineapple Stir Fry

Ready in 15 minutes, sweet and savory, fresh and healthy, packed with veggies and shrimp, glazed in a tasty sauce. I'm sure this recipe will become one of your favorite too!

Here is a quick, wholesome and scrumptious lunch or dinner idea that I'm sure your family is going to love as much as mine. 

What's not to love about sweet and savory tender shrimp coated in a delicious sauce and mixed with your favorite veggies and pineapple for a sweet and summery twist?!?

For this recipe I'm using my new Adamant Wok with Stainless Steel Lid by Fissler. I love this high-quality German-made brand. This wok is part of Fissler adamant line of non stick and scratch-resistant pots and pans. The coating on this wok is extremely tough, which means if you ever use metal utensils while cooking, they won’t scratch the finish. Perfect, right?!?

Now let's talk stir-fry.

For this recipe I start by mixing the ingredients for the sauce and set aside. In the wok or large non stick skillet, saute' the shrimp with just a little bit of olive oil until pink on both sides. Remove them for the pan (so they won't over-cook and become rubbery), and saute' the rest of the veggies and pineapple.

For this recipe I use red peppers, pineapple and snap peas. But you're welcome to select your favorite: broccoli, broccolini, celery, carrots, green beans, onion are all good alternatives. Cook the veggies for a few minutes until tender (adjust the time based on the veggie and your taste). Add the shrimp back to the pan, and add the sauce. Let it simmer for a couple of minutes until it thickens a little (add a bit of water to taste if too dense) and that's it! Serve with rice if you like.

Ingredients

  • 1 tablespoon corn starch
  • 1/4 cup orange (or pineapple) juice
  • 1/4 cup soy sauce
  • 1/4 cup hoisin sauce
  • 1 teaspoon ginger, minced
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 to 1/2 cup water, as needed
  • 2 tablespoon olive oil, divided
  • 1 lb large or jumbo shrimp
  • 1 red pepper, cubed
  • 1/2 pineapple, cut in cubes
  • 1 cup snap peas
  • sesame seeds and green onion, for serving (optional)

Instructions

  1.  Let's start by making the sauce. In a medium bowl, whisk well the orange (or pineapple) juice with the corn starch.
  2. Add the soy sauce, hoisin sauce, minced ginger and garlic, and salt. Whisk well and set aside.
  3. In your wok, heat one tablespoon of olive oil over medium high heat. Add the shrimp and cook them tossing on all sides for about 4 minutes. Remove from the pan and set aside.
  4. Add the remaining tablespoon of oil to the pan. Add the pepper, pineapple and snap peas. Cook for about 5 minutes or until crisp tender. 
  5. Add the shrimp back in the wok, and pour over the sauce. Mix and cook for a few minutes adding a bit of water as needed,  until the sauce thickens and veggies are cooked to taste.
  6. Sprinkle with sesame seeds and/or green onions. And serve over rice if  you like.
