Here is a summer recipe that I'm sure you'll want to try. 

It's easy, delicious and it bakes in no time. I know, I know, it's summer!! And when the high temperature hits, the last thing we want to do is turn on the oven. BUT. Yes, there's always a but. This tart only takes 15 minutes to bake and the end results is soooo good that you won't mind... No matter how hot and sweaty is going to get in your kitchen ;)

There's nothing like a bite of a mouth-watering peach-filled treat especially when peaches (or nectarines) are as sweet and juicy as right now!


I simply love their natural sweetness on top of this flaky and buttery puff pastry. With just the perfect amount of crispy and soft, all in the same perfect bite. And if you're anything like me, you will want to eat your slice right off the oven with a BIG scoop of your favorite ice cream on the side. 


For this recipe I'm using frozen puff pastry (Pepperidge Farm or similar) that you can easily find in most groceries stores, to make things quick and easy. All you need to do, is score the edge so it will evenly rise when in the oven. This means lightly cut/mark the dough around the border with the tip of a sharp knife, just to mark and not cut all the way through the dough. 

Prick with a fork the middle part that will be covered with peaches, so it won't rise too much. While the edge of your pastry will rise evenly to golden brown and crispy perfection.


Note: I sprinkle the dough with a bit of caster sugar - but you don't have to if you want to keep this recipe low-sugar. The same thing is true for the peaches: I toss them with a bit of sugar (regular or brown sugar), cinnamon, and lemon juice. But it's up to you if you want to do that or skip on the sugar.

I cut the tart into 9 small squares (3x3), but next time I think I will double up the recipe, make two tarts and cut pastry sheet each into 4 squares... It's so light and so good, that you'll want a big slice!

Ingredients

  • 1 sheet puff pastry, thawed
  • 2 large peaches (or 3 medium)
  • 2 tablespoons sugar, divided
  • 1/2 teaspoon cinnamon (optional)
  • 1 tablespoon lemon juice
  • milk or egg wash, for brushing the edges
  • powdered sugar, for dusting

Instructions

  1. Preheat the oven to 425F (220C).
  2. Slice the peaches in thick slices (about 12 slices per peach depending on size). And toss in a bowl with 1 tablespoon of sugar, cinnamon (if using), and the lemon juice.
  3. Unfold the puff pastry on a baking sheet lined with parchment paper.  And sprinkle the dough with some sugar (about 1 tablespoon or to taste). 
  4. With a pointy knife score a border of about 1/2 inch from the edges (i.e. cut but not all the way through the dough). And prick the middle part with a fork. 
  5. Arrange the peach slices (random or lined up in three raw) inside the border. 
  6. Brush the edges with some milk or egg wash (one egg mixed with one tablespoon of water). 
  7. Bake at 425F for about 15 minutes, or until golden and puffy at the edges. 
  8. Dust with powdered sugar and serve. You can cut into 9 small squares or 4 larger ones. 

Notes:

Delicious served with a scoop of ice-cream!


This is so good and light, you might want to double up the recipe and made two!
