Summer mode activated: fresh and vibrant mango and avocado salad with crispy and golden, air fried popcorn shrimp
Summer is right around the corner, so it's time to upgrade and spice up your salad game. What's better than a bowl full of fresh leafy greens to make you feel good and ready for bikini season?!? Well, I say: a bowl full of greens LOADED with colors and flavors to tickle your fancy and make you want to have "just salad" for lunch every single day!
In this salad I've added some sweet and juicy mango, wholesome avocado pieces, few slices of cucumber and heapful of crispy and tasty Gorton's Popcorn Shrimp, for your daily dose of seafood and protein. All tossed in a homemade lemon vinaigraitte. Doesn't this look fun and so delicious?!?
Gorton's make it so easy to add seafood to your meal. And as I'm sure you know by now, this frozen seafood staple is a family's favorite. Easy, delicious and so versatile.
One great way to cook these shrimp and any of the Gorton's frozen product, is in an air fryer. Set it at 400 degrees, cook for less than 10 minutes (tossing or turning halfway), and you end up with perfectly crispy and golden shrimp to add to any of your favorite dishes.

Popcorn Shrimp Salad with Mango and Avocado
Ingredients
- 1/2 lemon, juice and finely grated zest
- 2 tablespoons extra virgin olive oil
- 1 teaspoon honey
- 1/4 teaspoon salt
- fresh ground pepper to taste
- For the salad:
- 1 package Gorton's Popcorn Shrimp
- 4 cups mixed greens
- 1 mango, diced
- 1 avocado, diced
- 1 small cucumber, sliced
Instructions
- Cook the shrimp in your air fryer, following the direction on the package.
- In a small bowl, add the dressing ingredients and mix well.
- In a large bowl, combine the greens, mango, avocado and cucumber.
- Top with the shrimp when ready and drizzle with the dressing.
