Say hello to my latest
creation! These chocolate donuts are simply irresistible and all you can
ask for in a donut.
They are rich and soft, and covered
in a sinfully delicious chocolate glaze.
They are quick and laughably easy to make. It takes no more than 30 minutes
from start to finish to whip them up.
They are baked - not fried. So, there's no guilt when eating one (or several)
of these.
AND, best of all, they are VEGAN. No eggs, milk, or butter in here. But a
secret ingredient... Any guess of what that might be?!?
Drum roll please...
Mori-Nu Silken TOFU!
Did you guess it
correctly?!? Okay, maybe that wasn't much of a surprise, and my photo just
gave it away. Anyways, to make these donuts extra tender and soft, I used
Mori-Nu Silken Tofu together with some applesauce and a bit of vegetable oil.
No eggs, milk nor butter.
What
I love the most about this tofu is that it's such a versatile ingredient. Not
only can you sear it, crumble it or cube it to add to your favorite stir-fried
dishes, soups or bowls. But it's a heart-healthy vegetable protein that makes a
great alternative for dairy and eggs in your baking and cooking.
Mori-Nu
Silken Tofu is low-fat, gluten-free, preservatives-free, and it doesn't
need refrigeration (until opened of course). You can read more about this

As I mentioned before, this recipe
is quite easy and quick. It only requires 30 minutes of your time, one large
mixing bowl, a whisk, and one of these not-expensive donut pans (great
investment if you ask me!). This recipe is so easy that you will want to make
them again. and again. and again. Check out this one-minute video, and see for

Here is a last suggestion for you
before you start with the recipe: use a whole box of Mori-Nu Silken Tofu,
double up the rest of the ingredients, and you will end up with twelve donuts.

INGREDIENTS:
YIELD: 6 donuts
·
6 oz (170 gr, half package)
Mori-Nu Silken Tofu Soft or Organic
·
1/4 cup (50 gr) packed
brown sugar
·
4 oz (115 gr)
applesauce
·
1 teaspoon vanilla
extract
·
3 tablespoons (45
ml) vegetable oil
·
1 cup (125 gr)
all-purpose flour
·
1/3 cup (35 gr)
unsweetened cocoa powder
·
pinch sea salt
·
1 teaspoon baking
powder
·
1/4 teaspoon baking
soda
For the glaze
- 1/2
cup (65 gr) dark chocolate chips (vegan)
- 2
tablespoons non-dairy milk (soy or almond)
- pinch
sea salt
- optional
– sprinkles to decorate
PREPARATION:
Preheat the oven to 375°F (190°C). Spray or grease a 6-donuts pan.
Drain the tofu, and add to a large bowl together with the brown sugar, applesauce, vanilla extract and vegetable oil. Refrigerate any unused tofu.
Spoon
the batter into the prepared pan filling to about 3/4 full. Or, like I did,
spoon into a piping bag (no tip necessary) or ziplock bag. Cut a corner
and fill the pan. Make 6 donuts.
Bake
at 375F for about 12 minutes or until firm and spring back to the touch.
Invert
on a cooling rack to cool while you prepare the glaze.
In a
heat-safe bowl, add the chocolate, (non-dairy) milk and sea salt. Melt in a
double boiler or in the microwave (30 seconds at 60% power, mix and add
intervals of 15 seconds if needed). Whisk until melted and smooth.
Carefully
dip the top half of the donuts in the glaze. Place back onto the cooling rack
to set.
If
you'd like, add sprinkles on top to decorate.
