Now let's talk about the fun recipe I've been working on using both Mori-Nu Silken Tofu and my new fabulous Magic Chef air fryer.
If
you've never tried making egg rolls before this is your chance.
For
the filling I've used shredded veggies (carrot, cabbage and celery), and tofu
which I cut in small pieces, drizzle with soy sauce, and air-fry for a few
minutes.
With
this recipe you can really have fun. Find your favorite ingredients for the
stuffing and try it out! Experimenting is always the best part of
cooking.
Now,

Please
note, if you add too much stuffing, the wrapper might break. But, given
that we are not cooking these in hot oil, it is really not a big deal. In the
air fryer these will not fall apart and will not splatter oil all over your
stove. Ha! One more reason why I love the air fryer.
Now,
who is ready to roll?!? Here is the recipe for you!
INGREDIENTS:
YIELD: 8 egg rolls
- 1/2 package (6 oz, 170 gr) Mori Nu Silken Tofu, Extra Firm
- 1 tablespoon of soy sauce
- 2 cups of finely chopped purple cabbage (about 1/4)
- 1 cup shredded carrots
- 2 celery stalks, finely diced
- 1 tablespoon minced or grated ginger
- 8 won ton wrappers
- a couple of green onions, sliced
- salt to taste
- more soy sauce and green onions for serving
PREPARATION:
TIME: 30 minutes
Place in an oven safe pan that fits inside your air fryer basket.
Drizzle with the soy sauce and gently toss.
Air fry the tofu at 400° F for 5 minutes.
In the meantime prepare the veggies. Clean and cut the cabbage and carrots (unless you have pre-shredded).
Peel the ginger with a spoon and grate it.
Add the cabbage, carrots and ginger to the tofu. Toss and salt to taste.
Cook for another 5 minutes. And mix.
Working with one wrapper at a time. Place the wrapper diagonal in front of you. Using a brush or your finger, wet all sides with water.
Add one heaping tablespoon of filling in the middle (closer to the corner near you) and sprinkle with green onions.
Fold up the corner closer to you.
Fold up the two sides.
And roll up to the empty side. Secure the ends shuts (given that is wet it will stick).
Make sure not to overfill the wrapper (or it might break).
Fill more wrapper until you're out of stuffing. You should end up with about 8 egg rolls.
Brush each with a coating of olive oil.
Place them seam side down in the air fryer basket (no pan inside). Make one layer leaving a little space in between. You might need to cook these in more than one batch depending on the size of your air fryer.
Air fry at 400° F for 5 minutes or until golden on top.
Serve with soy sauce and more green onions if you like! Enjoy :)
