Tired and hungry?
This super healthy and extremely quick pasta with broccoli and potatoes
Did you just come home tired and hungry after a long day at work? Or, as in my case, you have no energy left after spending the whole day with the kids, who are home for spring break? It's almost dinner time, and everyone is starving and cranky ... including me!With such a busy day, I had no time to think about what to cook for dinner, even less time to run to the grocery store and buy anything.
Luckily in the refrigerator I found some broccoli. Perfect ingredient and one of the healthiest food: high in vitamin C and dietary fibers, with anti-inflammatory, anti-cancer and anti-oxidants nutrients. Plus, my boys love broccoli! What more could I ask? Now I have the perfect recipe for tonight: Linguine with broccoli and potatoes.
With only few and simple ingredients, in about 20 minutes, we can sit down at the dinner table, and enjoy a super healthy plate of pasta that will make us all happy and full. Trust me!
Ingredients: serving 4 people
- 1 medium potato, cut in cubes
- 5 oz of fresh broccoli
- 1 cup of freshly grated Parmesan cheese
- about 6 tablespoons of extra virgin olive oil
- 12 oz linguine pasta
- salt
Preparation time: About 20 minutes
Directions:
Step 1: Peel and cut the potatoes in small cubes. Place them in the large pot of salted water where you will cook the pasta. Bring to a boil.
Step 2: When the water boils, add the linguine and stir well. When you cook pasta (especially linguine) with other ingredients inside the same pot, it is likely that the noodles stick together. So stir more often than you normally would.
Step 3: About 4 minutes before the pasta is ready (al dente!!), add the broccoli cut in pieces. I like my broccoli not too crunchy, and not too mushy. So I think 4 minutes is about the right amount of time for the broccoli to be ready.You can adjust this time based on how you like the broccoli.
Note: the secret to this recipe is timing. It is very important to have the potatoes, broccoli and pasta cooked for the right amount of time, all at the same time!
Step 4: When cooked, drain the pasta. Mix it well with the olive oil and most of the cheese. Save some Parmesan cheese to add on each plate at the end.
I will feel so much better after this plate of pasta. Buon Appetito!
I made this tonight but added a little tomato sauce, chicken and hot sauce. So good.
